Our Olive Grove

When the olives begin to change color from light green to deep purple, it’s time for harvest. It’s a true delight to watch the fruit transform and take on its new hue, while a fresh, floral fragrance fills the groves. To produce Nanima’s Extra Virgin Olive Oil, the olives are harvested early in the ripening process. This early harvest ensures a high content of polyphenols – natural antioxidants with anti-inflammatory properties and a protective effect against cellular aging. The polyphenols also contribute to the oil’s stability and are responsible for its distinctively peppery flavor, a hallmark of premium quality olive oil. Long ago, olives were combed from the trees by hand. At Nanima, we continue this ancient tradition while embracing modern techniques, using both manual and electric combs. As the ripe olives loosen and fall into the dark green nets spread beneath the trees, the air fills with the scent of fresh grass and earth. It is a special moment — where the sound of falling olives blends with the quiet whisper of nature. Nanima listens to the land Once gathered, the olives are carefully sorted by hand. Large leaves, twigs, and any damaged fruit are removed, leaving only the finest olives. Letting them slip through your fingers releases a cascade of fragrances — a sure sign of being in harmony with nature.
